This Chinese Pineapple Fried Rice recipe is from my best friend Selina in Taiwan. I also made a Youtube video of the entire production process.

In my hometown Taiwan, we have pineapples all year round. It is also known as “Wanglai” in Taiwan’s southern Fujian language. It also has high nutritional value and is potentially medicinal for many diseases.

For me, I LVOE this dish Chinese Pineapple Fried Rice so much, and my whole family loves it.

Per 100 grams of fresh pineapple, calories are 57 kcal, dietary fiber 1.4 grams, vitamin C 12 mg, potassium 122 mg, calcium 9 mg, and magnesium 14 mg. And because pineapples have multiple nutrients, eating in moderation is more beneficial to human health:

Benefit 1 / Relieve constipation:
Every 100 grams of pineapple contains about 1.4 grams of crude fiber, also known as water-insoluble fiber, which can help absorb water in the intestine, promote intestinal peristalsis, and promote environmental protection in the body. Only bring fresh pineapple, cured meat, eggs, and rice to complete this quick and easy Chinese Pineapple Fried Rice.

Ingredients

  • Ingredients for 4-serving

  • 4 eggs

  • Cred meat 300g

  • Pineapple 300g

  • 4 bowls of rice

  • A little spring onion

  • Cashew 100g

Directions

  • Stir-fry the cred meat in the pan first, stir-fry for about five minutes, then take it out and set aside.
  • Put the sliced ​​pineapple slices (about 0.5cm thick) in the pot. The pineapples are fried here first to reduce the acidity of the pineapples and to drain off the excess water.
  • Put the oil in the pot, stir the eggs evenly, then add the prepared cold rice and stir evenly.
  • Finally, pour the cred meat and pineapple cooked in the first and second steps, and stir-fry in the pot.
  • After turning off the fire, you can sprinkle the green onions, put some cashew nuts and ENJOY IT immediately

Notes

  • For cooking fried rice, we always use cold rice. In our Chinese family, we usually use rice that was not eaten in the previous meal and let it cool down in advance to prepare it for later cooking fried rice.
  • Before fried rice, prepare cooked cred meat and pineapple in advance to make the overall flavor of this dish even better.
  • Because cred meat is already added, no salt is needed for this fried rice.
