Preserved eggs are duck eggs that have been preserved, also known as century eggs. They go well with congee, and a lot of Chinese people eat century eggs with congee.

What does preserved egg taste like?

They taste like regular boiled eggs whose flavors have been supercharged.

The gelatin doesn’t taste much like anything, but the yolk is egg turned up to 11.

How are preserved eggs made?

Ideally, preserved eggs are made by storing raw eggs for a few months in a mixture of wood ash, salt, lime, and maybe tea with rice straw or clay.

The alkaline chemicals raise the pH of the egg to 9–12 or even higher and break down some of the proteins and fats in the egg into flavorful molecules.

The Best Kung Pao Preserved Eggs Recipe Ever!

Ingredients

  • 4 preserved eggs
  • 6 g dried chili
  • 3 garlic
  • 1 tbsp Sichuan pepper
  • 2 tbsp roasted peanuts
  • 2 tbsp cornflour
  • 1 scallion
  • Seasonings

Seasonings

  • 1 tbsp water
  • 2 tbsp soy sauce
  • a little white pepper powder
  • 1 tsp sugar
  • 1 tsp ketchup
  • 1 tsp vinegar
  • 1 tsp sesame Oil
  • 1 tsp cooking wine

Instructions

  1. Baking peanuts in an oven before start cooking. Steam preserved eggs for 10 minutes.
  2. Slice the century eggs. Dip the preserved eggs with cornflour.
  3. Deep-fry the preserved eggs.
  4. Stir-fry Sichuan pepper until you can smell the aroma, then remove it. Then, add garlic and dried chili and stir-fry it.
  5. Add the preserved eggs into the pan, stir and pour the sauce in it. Stir-fry until the sauce is absorbed. Then, add the baked peanuts, stir-fry it and sprinkle some minced scallion.
  6. Ready to serve.
