Whipped to Perfection: 400 Times Stirred Dalgona Coffee Recipe

This 400 times coffee is said to be very popular in South Korea and Asia, and of course in Taiwan. This recipe is very simple and quick. You can use it as afternoon tea coffee, or you can mix it with CHINESE FAMILY BREAKFAST PANCAKE and CHINESE HOT SWEET PANCAKE to make exquisite Asian style brunch.

The 400 Times Stirred Dalgona Coffee is a viral sensation that took social media by storm. This hand-whipped coffee originally came from Han Ji Hand-Made Coffee, a tea shop in Macao. However, it wasn’t until it appeared on Korean variety shows that it became an instant trend across Asia. The name “400 Times Coffee” comes from an interview where the shop owner mentioned that it requires approximately 400 manual stirs to achieve its signature frothy texture—leading Korean media to popularize the name.

The Secret to the Perfect 400 Times Stirred Dalgona Coffee

The key to achieving the perfect texture lies in the 1:1:1 ratio of instant coffee, sugar, and water. Manually whipping it takes effort—around 400 stirs—to form a thick, creamy foam. However, for convenience, an electric whisk or hand mixer can achieve the same result in just 1-2 minutes.

Here are a few essential tips to ensure success:

Stick to the 1:1:1 Ratio – Any change in proportions will affect the color, texture, and consistency of the foam.
Use Instant Coffee Only – Avoid three-in-one coffee mixes, as they contain creamer, which prevents proper foaming. Freshly brewed espresso is also not concentrated enough to create the desired effect.
Expect a Sweet Taste – This drink is visually appealing but contains a high amount of sugar. If you’re not a fan of overly sweet drinks, consider reducing the sugar content or using a sugar substitute.

Final Thoughts

While 400 Times Stirred Dalgona Coffee looks luxurious and satisfying, its taste is essentially whipped instant coffee with a lot of sugar. It’s a fun drink to try, but don’t be surprised if you find it a little too sweet—many first-timers don’t finish the entire cup!

Servings

servings

Ingredients

  • 6 teaspoons Instant coffee

  • 6 teaspoons of sugar

  • 6 teaspoons of hot water

  • Milk 250ML

Directions

  • Instant coffee, sugar mixed with hot water.
  • Stir with a blender or manually until it looks like a brown foam.
  • Add milk to the cup, add the brown foam coffee, mix well, and drink.

Notes

  • The secret of making this Stirred 400 Times Dalgona Coffee is to mix sugar, coffee powder, and water 1: 1: 1 and then stir quickly. Manually, it should stir well over 400 times to make it very thick. Here I use an electric blender to mix, it only takes 1-2 minutes. The secret of this Stirred 400 Times Dalgona Coffee recipe is to maintain sugar, coffee powder, and water a 1: 1: 1 portion, otherwise, it will affect the color and consistency.
  • And don’t use three-in-one coffee, because it has creamer ingredients, it can’t be beaten. If you want to make fresh espresso, it is very difficult, because instant coffee is concentrated and evaporated to make powder, so it is difficult for fresh espresso to be so concentrated.
