This noodle recipe, one of the top street foods in Wuhan, China, is a comforting and high-calorie noodle dish perfect for the winter. Made with sesame oil, chili oil, garlic, and a flavorful soy-based sauce, these noodles offer warmth and nutrition. Pair them with vegetables for a balanced meal.

Ingredients

  • Alkali noodles 150g

  • Sauce
  • Hot oil 15g

  • sesame paste 40g

  • sesame oil 20g

  • Soy sauce 5g

  • Sugar 5g

  • Garlic 10g

  • Salt 2.5g

  • a little pepper

  • Vinegar 5g

  • Cooked peanuts 10g

  • Spicy radish 10g

  • Shallots 5g

Directions

  • Blend sesame paste with a little bit of sesame oil into a slightly thick sauce, then add soy sauce and salt, stir well into a sesame sauce. In addition, garlic, pepper, vinegar, and sugar also blends into a sauce.
  • Peanuts chopped, spicy radish and shallots cut into pieces.
  • pour water to the pot, boil, add noodles, and cook for about 3 minutes. Cook the noodles and cook until they are ripe. remove the cooked noodles from water, pour a spoonful of sesame oil, and then blow dry with a hair dryer.
  • Pour the sesame sauce and garlic sauce, sprinkle with peanuts, spicy radish and shallots, mix well and ready to serve.

Notes

  • Must use alkaline water noodles: This is a special type of noodles, with good viscoelasticity, and has antiseptic, neutral and acidic effects.
  • Anti-adhesion after noodles are cooked.
  • Be sure to use sesame oil to blend with the sesame sauce, not water, otherwise it is not fragrant.
