Ingredients
long glutinous rice 4 cups
water 2.8 cups
squid 100g
pork Belly 300g
mushrooms 30g
shrimp 60g
shallots 100g
a little parsley
- Seasoning:
rice wine 2 tablespoons
salt 1/2 teaspoon
sugar 1 tbsp
white pepper 1 teaspoon
soy sauce 2 tablespoons
- Sauce Dressing
sweet and sour sauce 2 tablespoons and water 2 tablespoons. the ratio of 1 to 1
Red miso 1 tablespoon, ketchup 1 tablespoon, sugar 1 teaspoon.
Directions
- Place the long glutinous rice in the inner pot of the electric cooker, soak it in 2.8 cups of water for more than 4 hours, and set aside.
- Soaked mushrooms, pig pork belly shredded; sliced the shallot.
- Pour the appropriate amount of oil into the pan and add the shallot slices to fry to slightly golden colour.
- Add the shrimp, soaked mushrooms and saute.
- Add the squid and sauté the pork until the meat turns white.
- Add rice wine, salt, sugar, white pepper, soy sauce and stir well. Turn off the heat.
- Spread the fried ingredients on the long glutinous rice, put the inner pot into the electric cooker, add 1 cup of water to the outer pot, and steam until the switch jumps.
- Open the lid and mix well. Add 1/4 cup of water to the outer pot and continue to steam until the switch jumps.
Finally, put the rice in the bowl, pour the appropriate amount of sauce according to the taste, and sprinkle with the parsley.
Notes
- Rice is soaked in water before it is easy to steam.
The ratio of rice to water is 1:0.7, and the taste is just perfect.
Cook and steam again, the rice rice grains are chewier.
