Taiwanese Salty Crispy Chicken (鹽酥雞) – A Crunchy and Savory Snack
This is a very popular Taiwanese street food, and I LOVE it so much. In fact, many people buy this for dinner at night markets or street stalls after work, which is also one of the popular late-night options. Additionally, you can serve it with some rice and green vegetables for a balanced meal. Moreover, it pairs perfectly with coleslaw or french fries as an appetizer.
Make Taiwan Street Food Successfully At Home
First, marinate the chicken pieces for at least half an hour with Chinese cooking wine, soy, sugar, five spice powder, ginger, spring onion, and sesame oil. After that, coat the marinated chicken with sweet potato flour.
Healthier Twist
To make it healthier, try air-frying the chicken instead of deep frying. That way, the result is still crispy but with fewer calories!

minutesThis is one of my favorite Taiwanese street food, Taiwanese Salty Crispy Chicken 台湾咸酥鸡.
Ingredients
500g chicken pieces
1 tbsp rice wine
1.5 tbsp sugar
1 garlic clove chopped finely
1/2 tsp five spice
1/2 tsp white pepper
3 tbsp soy sauce
1 egg yolk
handful of basil leaves
sweet potato flour, coarse ground if possible
Taiwanese salt ‘n’ pepper powder
Directions
- Chop the chicken into small pieces, boneless if you like, depends on your preference
- In the bowl with the chicken add soy sauce, rice wine and garlic, five spaice and white pepper, mix it all together then put it in the fridge for 30 mins to marinade
- Add the egg yolk to the chicken mixture, mix it up
- Coat the chicken pieces with the sweet potato flour, one by one and put them on a plate. Wait until the flour coated pieces get wet again before frying
- Get your oil hot and at least 1″ deep. I used just a small pan and fried the chicken in 2 batches
- Put the chicken in piece by piece for a while, don’t stir it, we don’t want the crispy coating to come off
- when golden brown take the chicken pieces out and heat the oil to very hot again; reintroduce the chicken to the oil for a couple of minutes.
- Repeat step 7. one more time and add your basil leaves. this will be nice and crispy.
- Now you could sprinkle the Taiwanese salt n pepper powder over the chicken pieces. Serve it on its own or with some side dishes… It tastes SO YUMMY!
Notes
- Marinated chicken is so important, and this is the key to making Taiwanese Salty Crispy Chicken.
- After fried the chicken twice, the outer skin is more crispy!
