  • Peeled and finely diced

  • Chicken Stock or Water – 1 cup

  • Salt – a pinch

  • White Pepper – a pinch

  • Cooking Oil – for greasing the dish

Directions

  • Prepare the White Layer (Base)
  • Combine Ingredients:
  • In a bowl, mix the chicken egg whites, salted duck egg whites, and diced century eggs. Add a pinch of salt, white pepper, and 1/2 cup of chicken stock or water. Mix well and strain for a smooth texture.
  • Steam the Base Layer:
  • Grease a heat-safe dish with cooking oil. Pour the mixture into the dish. Cover with plastic wrap or foil to prevent water droplets from disrupting the surface.
