Sweet and Sour Chicken (左宗棠鸡)

Sweet and Sour Chicken (左宗棠鸡) is not surprising on the first list popular dish of the menu. The sweet and sour mixed flavor combined with the bright appearance is one of the most familiar Chinese dishes in Europe and the United States. I guess no one can reject it. This dish has been well improved in Western society, and this time I want to share is this super simple version recipe of Sweet and Sour Chicken (左宗棠鸡)!

Ingredients

500g Chicken filet
60g Green pepper
80g Red bell pepper
80g Yellow bell pepper

Marinade
1 tbsp Rice wine
1/3 Whole egg liquid
2 tbsp Soy sauce
Moderate amount of potato starch

Seasoning
2 tbsp Sugar
2 tbsp White vinegar
2 tbsp Ketchup
Sugar: white vinegar: ketchup equal ratio 1:1:1

Slice green pepper, yellow pepper and red pepper.

Cut the chicken into 3 cm pieces, mix in 1/3 whole egg liquid, 1 spoon of soy sauce and 2 tablespoons of potato starch, and mix until thick.

(The meat should be massaged until the marinade is completely absorbed, and the meat will be juicy.)

Prepare a plate of potato starch and put the marinated chicken into the sauce. (The marinated meat is mixed with a small amount of potato starch to increase the viscosity, and the powder will be more even.)

Pinch the chicken a few times. (Pinch it so that the powder does not fall off easily)

Pour in oil on the pan, and heat it until the oil temperature is about 180 ° C, put it into the chicken for about 5 minutes, then remove the oil and set aside.

Heat up the right amount of oil, add 2 tbsp of sugar and stir fry until it become liquid, then add 2 tbsp of ketchup, add the scallion and chicken, stir-fry the chicken,

add those three-color pepper and stir-fry, and pour the white vinegar 2 tbsp before serving. Well doen!

Tips

Sweet and sour sauce is very important in this dish.

Sugar: White vinegar: ketchup 1:1:1

The secret of why this dish tastes sweet and sour inside but it has the crispy taste of the skin. its the sauce should be evenly cooked before put in the fried chicken in the pan to keep the chicken skin crispy.
