In Chinese cuisine, all kinds of shrimp dishes are also my favorite. Today I want to share this Cashew Shrimp (腰果虾) that I like very much in Chinese restaurants.

The ingredients are very easy to prepare, and the nutritious nuts are included in the dish. Furthermore, this cashew shrimp is the most classic dish is western Chinese restaurants.

Use the commercially available cashew nuts with fresh shrimps and garnish with bright sweet peppers. Not only the cooking time is fast, but also the taste is refreshing. Good-looking and delicious, it is a classic Chinese dish that adults and children will love!

Ingredients

2-serving
150g of shrimp
200g of sweet pepper
60g of nuts
Salt
Sugar
Cooking wine

Prepare food materials: Shrimp shelled, open the back to remove the intestines, wash and dry with a kitchen paper, marinate for 15 minutes with cooking wine in the fridge; cut the sweet peppers into small pieces.

Add 1 tbsp of oil to the pan and stir-fry the ginger. and then add the shrimp into it to stir-fry. (80% well done is OK, then set aside)

Do not wash the pot, fry the cashew nuts with the residual oil, stir the cashew nuts to arouse scent, then add half a teaspoon of salt and sugar, or u can add white pepper.

Add the sweet pepper and stir-fry evenly, slightly fry, to maintain crispness, not too much juice.

Add back the shrimp and stir-fry together.

Tips

*The shrimps marinated in the cooking wine are fried with ginger and the aroma will be very good.
*The ratio of salt to sugar is 1 to 1.
* The cashew nuts are crispy and delicious, and the sweet peppers also have a sweet taste. So, the taste of the dish will be more pleasant, and a little salt or white pepper can be added without excessive seasoning.
*The sweet pepper that can be eaten raw should not be fried too long, so as not to produce too much water, affecting the overall refreshing taste of this dish.
