Silky Steamed Eggs with Prawns (鲜虾蒸蛋)
Steamed egg is a really common home-cooked dish that I really enjoy. On the basis of the original Steamed Egg, this time I also added the prawns that I also like very much.

Ingredients
Four eggs ~210g
Pure milk 250g
Salt 1g
Soy sauce
Shallots

First, prepare 5 fresh prawns in a bowl.
Then soak the prawns in ice cold water for 10 minutes for later use.
The step makes the prawns easier to peel.
Next, prepare the egg liquid.
Prepare 4 eggs ~210g
Break the eggs. Leave the egg liquid in a bowl.
Add 250g plain milk.
Add 1g salt.
Then stir in the same direction for 3 minutes for later use.
The egg-to-milk ratio should be about 1:1.2.
(You May use water as a replacement if u don’t have milk)
Peel the prawns after 10 minutes of soaking.
The cut into the peeled prawns in the back and remove the prawn line.
After that, cut the prawns into small diced and put them into the bowl for later use.
You may also use beef or pork as replacements of prawn.
Stir the egg liquid until it’s even. Then move it into a plate.
After that, seal the egg liquid with plastic wrap.
So that steam doesn’t go into the dish.
Next, steam the dish.
Steam the processed egg liquid in a steam pot over medium flame for 8 minutes.
Note that the flame must not be neither nor too low.
The correct heat depends on the depth of the plate.
8 minutes later, take out the steamed egg and top it with chopped green onion to finish.
A very nutritious dish of silky steamed eggs with prawns is done.
Tips
Milk removes the unpleasant smell from the egg liquid while water doesn’t. The egg-to-milk ratio is about 1:1.2
You may also use beef or pork as replacements of prawn.
To ensure an evenly steamed dish, do not uncover the steam pot while steaming.
