Ingredients

  • Duck pieces (preferably with bones) – 1.5 kg

  • Fresh ginger – 200 g (sliced)

  • Rice wine – 500 ml

  • Black sesame oil – 3 tbsp

  • Daikon radish – 1 large (sliced into thick rounds)

  • Cabbage – 1 small head (roughly chopped)

  • Mushrooms (shiitake or enoki) – 200 g

  • Fish balls or meatballs – 300 g

  • Firm tofu – 300 g (cut into large cubes)

  • Herbal soup packet (or 5 pieces of dried Chinese yam, wolfberries, and red dates)

  • Salt and white pepper – to taste

Directions

  • Prep the Broth
  • Heat sesame oil in a large pot over medium heat. Add ginger slices and sauté until aromatic.
  • Add duck pieces and sear until lightly browned.
  • Pour in rice wine and enough water to cover the duck. Add the herbal soup packet, bring to a boil, then reduce to a simmer.
