Ingrediesnts
550g pork belly
2 garlic balls
3 green onions
1 onion
300g dried tofu
2 tbsp soy sauce
1 tbsp thick soy sauce
1 tbsp sugar
1 tsp white pepper
1 cup of rice wine (160cc)
1000cc beer

Preparation
slice pork belly into slices, about 1-1.5 cm thickness
Sliced onion, green onions, dried tofu
Preheat the pan and add the pork belly.
Sprinkle a spoonful of sugar evenly, the sugar will be caramelized in a hot pot, and panfry pork belly into golden on both sides.
Put the pork belly evenly in the bottom of the soup pot, add 2 garlic balls, sliced onion, and dried tofu.
Add 1 teaspoon white pepper, 2 tablespoons soy sauce, 1 tablespoon thick soy sauce, 1 cup rice wine, and 1000cc beer.
Put the green onions
After the pot is boiled, cover the lid and stew for 1 hour.
Tips
The step of frying pork belly is very important. This is an important step to force the oil and the smell of raw meat to go. If you ignore this procedure, the taste of the meat will be very different when finished.
I replaced shallot with onions in this recipe. If it is convenient to get the shallot, it will be more Taiwanese flavor with the shallot.
If you have a pressure cooker at home, the cooking time can be reduced a lot.
